Teheri rice

Teheri recipe:

Teheri is a delicious and easy to make rice padh that is spicy and aromatic.  It is mainly cooked with potatoes and turmeric masala, but sometimes meat is also added.  Below is the classic Aloo Teheri recipe.

Ingredients:

  • Basmati or Polao Rice – 2 cups
  • Potatoes (cut into large pieces) – 2
  • Onion (chopped) – 1
  • Garlic paste – 1 tsp
  • Ginger paste – 1 tsp
  • Tomato (chopped) – 1
  • Cinnamon – 1 piece
  • Cardamom – 2
  • Cloves – 3
  • Bay leaves – 1
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
  • Turmeric powder – 1 tsp
  • Chilli powder – 1 tsp (as per taste)
  • Garam masala powder – ½ tsp
  • Salt – as per taste
  • Ghee or oil – 3 tbsp
  • Water – 3.5 cups

Method of preparation:

1. Firstly washing the rice and soak it for 15-30 minutes.

2. Heat the oil or ghee in a pan and fry onion when it turns brown.

3. Then, stir in the ginger-garlic batter, then mash it well with the tomatoes.

4. Saute all the powdered spices, salt and whole spices (cinnamon, cardamom, cloves, bay leaves).

5. Stir well with potatoes and saute for 2-3 minutes.

6. Now stir with rice for another 2 minutes.

7. Cover with enough water and cook on medium heat.

8. When the water dries up, keep it under pressure for 10 minutes.

9. Finally spread ghee and garam masala powder.

Now, Teheri is ready it is  Served with yogurt or salad.
