Roast saffron

saffron biryani

Equipment:

▪️500 grams of basmati rice
▪️8-10 teaspoons of ghee
▪️1/4 cup cashews
▪️1/4 cup raisins
▪️5-6 almonds
▪️1 pinch of saffron
▪️2-3 teaspoons of milk
▪️2 teaspoon Shahi garam masala
▪️1/4 tsp whole garam masala
▪️Salt and sugar to taste
▪️1 pinch turmeric or food color
▪️ teaspoon of rose water

Ready method:

▪️First wash the rice and drain the water and mix the rice with two spoons of ghee and one spoon of garam masala.

▪️Saffron should be soaked in two or three spoons of milk and mixed with chala.

▪️ Now boil all the garam masala in a pan with full ghee, add cashew nuts, raisins and crushed almonds and fry them for a while with the coated rice and fry them one by one with salt, sugar, rose water, food color and the rest of the garam masala as per taste and cover with water as expected.

Remember to keep the gas flame from low to medium while cooking.  After 10 to 12 minutes, open the lid to see if the rice is cooked properly  or not and the water is completely dry.

Boil the prepared saffron once the water dries up and becomes clear. Now  saffron biryani is ready.Serve with any vegetarian, non-vegetarian option.
