Materials required –

Cut the chicken into 8 roast size pieces

½ cup chopped onion (for half cup barista)

  Half a cup of onion batter

Three tablespoons of sour yogurt

Ginger paste 2 tsp

  Garlic paste 2 tsp

Coriander powder half teaspoon

Almond batter 3 tsp

Poppy seed batter 1 tsp

Alu Bokhara 3 o’clock

  Nutmeg (two fourths of one)

  Jayatri is little

Cinnamon 2-3 pieces

  Cardamom 4 o’clock

  Star Ennis (two fourths of one)

  Condensed milk 1 cup

  A little turmeric (optional)

Rose water 2 tsp

  Salt in moderation

  Soybean oil in quantity

  Sugar 1 teaspoon

  Two tablespoons of ghee

  Lemon juice 1 teaspoon

How to cook –

  Cut the chicken pieces and wash well and drain the water.  Put a little ginger batter, lemon juice, a little salt in it and cover it.

  Now heat oil in a pan and fry onions in it.  Heat two tablespoons of ghee with that oil and fry the chicken pieces in it on medium flame.

Now add cardamom, cinnamon, bay leaf, chopped onion, ginger, garlic, onion paste, coriander powder, salt and half a cup of water in this ghee and oil.

  While grinding, make a paste by taking sour curd, little beresta, almond flour, poppy seed flour, star anise, nutmeg and jaitri together in a blender.

  Meanwhile, when the masala is ground, stir and cover with the chicken pieces.  Cook on low heat and occasionally turn the meat pieces.  Now mix it well with the blended paste and cover it.  After a while, when the broth reduces, mix a pinch of turmeric powder with thick milk and stir well.

When the meat is cooked, five to six green chillies should be cut slightly from the head side and given for aroma.  Then add sugar, potato bokhara and rose water and simmer for another 10 minutes on low flame.

  1.   When the roast water dries up and the oil rises to the top, fry the onion and add 1 teaspoon of ghee.  Then sprinkle the rest of the chicken and serve perfect Shahi Roast
