Ingredients
1kg medium size chopped mutton
4 tbsp mustard oil
Salt to taste
little sugar
5 medium sized onions (I need more gravy in my house so onions too)
14-15 cloves of garlic
2 inches of ginger
4-5 green chillies
3 dry chillies for boiling
4 bay leaves
Add cumin seeds slowly to boil as required
1 tsp vinegar / 1 tsp papaya paste
2 teaspoons Kashmiri chilli powder (to make the color more red)
1 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 tsp nutmeg and jaitri powder
4 tablespoons sour yogurt
1 teaspoon garam masala powder
6 pieces of potatoes
1 teaspoon red chili powder
1/2 cup tea liqueur
cooking instructions
1) Wash the meat well and drain the water. After that, mix some ginger paste, garlic paste, chili paste, sour curd with a little sugar, vinegar or papaya paste, 1 tablespoon of mustard oil and leave it in the fridge for a day or 7-8 hours if you have time.

2) Fry the potatoes with turmeric and salt in a pan with mustard oil.

3) Boil bay leaves, dry chillies, cumin seeds in remaining oil and add chopped onion. If you add little sugar, the caramelized color will come out very well. When the onions are fried, they will become quite soft. Take the onions to one side and fry well with turmeric powder, Kashmiri chili powder, red chili powder in the remaining oil. Even if the turmeric is fried directly in the oil, the color is great.
Then mix everything well and fry again. Cut the tomatoes. Grind the remaining ginger and garlic paste well. Add jai and jaitri powder at this time.

Mix well and grate it with the marinated mutton. I will mix tea liquor.
Shredding the mutton is the most important step. The mutton should be shredded very well with time. If needed, I have to mix a little hot water sometimes
