Milk Gourd Recipe (Cow Milk / Formula Milk)

In Bangladesh,  milk  gourd is a dish that holds a special place in the hearts and minds of many. This humble dish is made from a simple combination of grated  gourd and milk, but its taste and aroma can evoke memories of childhood, family gatherings, and festive occasions.

gourd with milk is also a dish that is often prepared for special occasions. During Eid al-Fitr, many families serve this dish as a dessert after the must-to-have biryani and curries. It is also a popular dish during wedding feasts.

I, myself, have many great memories of this dish. My mother would often prepare it for us on hot summer afternoons when we needed something light and refreshing to eat. She would grate the gourd and cook it in milk until it became soft and creamy. Then she would add sugar and a dash of cardamom powder to give it a sweet and aromatic flavor.

Ingredients:

  •  Gourd – 2 cups
  •  Ghee – 1 teaspoon
  • Milk – in quantity
  • Sugar/Talmisri – As per taste
  • Cardamom – 1 t
  • Cinnamon – 1 t
  • Almonds (optional) – 1 tsp

Method of preparation:

First, wash the gourd well and peel it.
Grate/chop the fleshy part of the gourd by  removing the soft part inside.
Boil the gourd with water in a pot.  When boiled, drain the water.
Now fry a little with ghee, cardamom, cinnamon in a pan and fry the boiled gourd for another 3-4 minutes.
Then add milk/water to it and let it boil for a while and stir occasionally.
When milk gourd becomes thick, add sugar/ talmisri, almonds little by little.
When the sugar melts and mixes well, heat it for some more time.
If you add formula milk, at this stage, turn off the stove and mix the formula milk.
At the end, cool down and serve delicious milk gourd recipe

Note – If you use formula milk, make the whole recipe with water and after turning off the stove, mix the formula milk.
