Materials
1. Eggplant 1
2. Gram flour 1 cup
3. Rice powder 1 tablespoon
4. Cornflower 1 tablespoon
5. Salt in moderation
6. Half a teaspoon of ginger paste
7. Half a teaspoon of garlic paste
8. Half a teaspoon of roasted cumin powder
9. Half teaspoon of roasted coriander powder
10. Oil and
11. Dry chili powder 1 tsp.
Method
Wash the eggplant and cut it into thin slices lengthwise. Do not slice too thickly. Then the purple will not cook well. And it will absorb more oil while frying. To make purple batter, mix gram flour, rice powder, cornflour, salt, ginger-garlic paste, tala cumin powder, coriander powder, dry chili powder and oil in a bowl and mix well.
Now make a batter with water little by little. Don’t make it too thick or too thin. Now heat the kadai with enough oil. When the oil is hot enough, take one violet slice and dip it in the batter and leave it in the oil. 3-4 slices can be folded together. After a while, when the violets will swell, pour a little hot oil over the violets with a spoon.
This will make the violets bloom more. Now flip one side and fry the other side in low heat. To make crispy purples, fry the purples for a little longer on low heat.
