Lahori Mutton Recipe
This  lahori mutton recipe is a little different and very tasty.  A perfect recipe to serve with rice.  What is called Mutton-Rice?  But if you want you can definitely eat it with bread.  It can be done with some ingredients at home. Let’s tell the recipe:

Ingredients:

Mutton – 1kg
Tomato – 4 big size
Ginger – 1&1/2 inch
Garlic – 20 cloves or one
Pepper – 12-13 o’clock
Dry chillies-4
Sour yogurt – 3 tbsp
Cumin powder – 1 tbsp
Coriander powder – 2 tbsp
Kashmiri chilli powder = 2 tsp
Salt – as per taste
Turmeric – 1 tsp
Onions – 4 large size
Nutmeg – 1/2 tsp
Mustard oil – 5 tbsp
Ghee-3 tsp
Garam masala powder – 1 tsp
Chop coriander leaves
for boils
Bay leaf-2
Cardamom-4
Cinnamon – 2 sticks
Cloves-4
2 large cardamoms (grated)
Dry Chilli-2
Jayatri – Two petals or half of a flower
Method:
I will blanch the tomatoes by placing them in hot water, i.e. when the water boils, put them in the tomatoes for 2 minutes and put them in ice cold water.  By doing this, the upper skin will come up easily.
After blanching and removing the skin, paste together tomato, ginger, garlic, pepper, dry chili.
Beat the sour curd very well and mix it with cumin powder, coriander powder, turmeric, Kashmiri chili powder.
In a pan, heat mustard oil, two spoons of ghee and add everything that is kept for boiling. After the fragrance comes out, I cut onions into thin slices. I fried the onions for a while.
If the onion is fried, add the mutton and fry it on high flame for 3-4 minutes or until the color turns brown. At this time, I have added nutmeg powder.
If fried, tomato, ginger and garlic paste should be poured and mixed.  Squeeze the ginger until the raw smell of garlic goes away.
Then mix it with salt according to taste.
After that I gave the mixture of curd and powdered spices, this time the heat should be kept low.
When the curd is mixed well, wash the bowl of curd and add water, very little water.  After that, you have to take it a little tight with the cover, until the oil comes out.  Sometimes the cover should be opened and shaken.  If necessary, you can give a little hot water, very little.
When the oil comes out, add as much hot water as possible.  When it boils, reduce the heat with a lid and cook until the meat is cooked. It will take about an hour.  If you put it in the cooker, give it at this stage.  I did it in a pan.
When it is boiled add powdered garam masala, a spoonful of ghee, and crushed coriander leaves and cover the gas flame and keep it for 3-4 minutes.
At the end I garnished it with raw chilli slices, julienne cut ginger, chopped coriander leaves.
Serve this Lahori Mutton recipe with hot plain white rice.  And enjoy the mutton-rice .
