Basmati rice 2 cups,
Ghee 2 tablespoons,
Whole garam masala
One inch of cinnamon, five cloves, and five small cardamoms

Nutmeg Jayatri powder 1/2 teaspoon,
Samrich powder – 1/4 teaspoon,
Cashew nuts 30 grams,
Raisins – 30 grams,
Two and a half teaspoons of salt,
Sugar – 3 tablespoons (40 grams),
Sesar 1/2 teaspoon,
Liquid milk 1/2 cup + 1 tablespoon,
Hot water – 1 cup
Method-
Rinse the basmati rice thoroughly, let it soak for half an hour, and then drain the water.
For half an hour, soak half a teaspoon of saffron in one tablespoon of heated, boiling milk. Fry the cashews and raisins in heated ghee. After adding the soaked rice and salt, and stirring slightly, bring the bay leaves and whole garam masala to a boil in the ghee.
After adding 1 cup of hot water and 1/2 cup of hot milk, cover and lower the gas to a low heat for 5 minutes, or until it begins to boil gently
After one stir, cover it once more and cook it for three minutes.
Add the cashew nuts, raisins, sugar, nutmeg, jaitri, and samrich powder to the 80% cooked rice, sprinkle a little ghee and milk-soaked kesar over top, and cover once more. Place the polao pot on a pan or tawa and cook for 1 minute on high heat, then reduce the heat to low and cook for 3 to 4 minutes.
After turning off the gas, cover it and let it stand for another 15 to 20 minutes before serving
