Malai jorda

Equipment:

▪️1.  Basmati or Kalijira rice 2 cups,
▪️2.  Half a cup of ghee,
▪️3.  Sugar Soya 1 cup,
▪️4.  1 tablespoon of orange peel,
▪️5.  2 bay leaves,
▪️6.  Cardamom 3,
▪️7  1 piece of cinnamon,
▪️8.  1/2 teaspoon of jorda colour (mixed in water), a pinch of salt,
▪️9.  10 each of pistachios and almonds,
▪️10.  Raisins 2 tbsp
11.  Baby Sweets 20-25.

Method:

▪️1.  Wash  properly and soak the rice for half an hour.  Now cooking rice, water, food colouring, orange peel, a pinch of salt and 1 tablespoon of ghee in a pot over medium heat.

▪️2.  When 80% is cooked, take it down and drain the water.  Now heat ghee in a non-stick pan and stir in bay leaves, cardamom and cloves and add sugar.  Add little water to dissolve the sugar.

▪️3.  After that, shake the boiled rice with a light hand.  Do not stir too much, the rice will break and become sticky.  Now reduce the heat and cook with almonds and raisins. When the water dries up, keep it for half an hour.  It will be neat.

For making Malai jorda:

In a non-stick pan, add 1 tablespoon of ghee, 2 cups of liquid milk, half a cup of powdered milk, a pinch of cardamom powder and six cups of condensed milk, stirring constantly.  When it thickens, take it off the stove and let it cool.  Spread baby sweet and malai over the jorda in a serving bowl and serve.
